Sauce is a type of paste produced by homogenizing various ingredients to change the aesthetic and taste perception of foods and add flavor. It is generally used as a side product alongside various dishes.
Examples include Ketchup, Mayonnaise, Ranch Sauce, Barbecue Sauce, Mustard, and more.
PROCESSES
During sauce production, two different process methods are used depending on the structure of the sauce being made: Hot Process and Cold Process.
HOT PROCESS: This method involves raising the food and ingredients to high temperatures to stop enzyme activity, reduce microbial load, and maintain the desired consistency.
Ketchup, Barbecue Sauce, Hot Sauce, Sweet & Sour Sauce, etc.
COLD PROCESS: This method involves processing food and ingredients without exposing them to high temperatures.
Mayonnaise, Ranch Sauce, Mustard, etc.
