PEKMEZ (GRAPE MOLASSES) PRODUCTION LINE
Pekmez is a nutritious and intensely sweet syrup made by extracting juice from various fruits and boiling it under vacuum. It contains abundant vitamins and minerals.
Pekmez Types: The most commonly consumed types are produced from fruits such as Date, Carob, Fresh and Dried Grape, Juniper/Andız, and Mulberry.
Pekmez Production Varieties: It is divided into three categories: Dried Fruit Pekmez Production, Fresh Fruit Pekmez Production, and Pomegranate Molasses Production. The Dried Fruit category includes dried fruits or fruits with naturally low water content such as Dried Grape, Dried Mulberry, Carob, and Date. The Fresh Fruit category includes Fresh Grape and Fresh Mulberry. Pomegranate, which is evaluated in a separate category, belongs to the Pomegranate Molasses production category.
DRY FRUIT PEKMEZ (GRAPE MOLASSES) PRODUCTION LINE: Low-water-content fruits (Date, Carob, Dried Grape, etc.) entering the facility are loaded into bunkers. Water is added according to the recipe amount, and diffusion occurs over a certain period. Diffusion allows the essence and sugar from the raw material to pass into the water. After filtration — which varies depending on the process — this liquid and fruit pulp is sent to the Evaporator for evaporation. These products are boiled under vacuum at low temperatures until the desired brix level is reached. The product, once at the desired brix, is transferred to the Filling Line via pumps.
FRESH FRUIT PEKMEZ (GRAPE MOLASSES) PRODUCTION LINE:Fresh fruits (Grape, Mulberry, etc.) entering the facility go through pre-processing and the fruit's juice is extracted. After filtration — which varies depending on the process — these products are sent to the Evaporator for evaporation. The prepared juice is boiled under vacuum at low temperatures until the desired brix level is reached. Once at the desired brix, the product is transferred to the Filling Line via pumps.
